Belated pic...

My sweethearts on their first day of pre-school!

Chicken Cacciatore...(even the kids liked it!)

Can italian diced stewed tomatoes
boneless skinless chicken breast (on sale at publix right now for 1.99)
chopped garlic
italian seasoning
white cooking wine
olive oil
tomato paste

add a couple of tbsp of olive oil and a couple tbsp of white cooking wine to pan, season chicken with salt and pepper, add to pan and cook until browned on both sides, if the pan starts to dry out add a little more olive oil/cooking wine. when the chicken is done add the chopped garlic and can of tomatoes (do not drain) and 2 tbsp of tomato paste. stir to mix and cover allow to simmer for at least 1/2 hour ( i flipped the chicken a couple of times to make sure it flavored on both sides) and served over whole wheat penne noodles. It was really good and tasted very fresh!

quick meal, taste like you slaved over it...

Ravioli in tomato basil cream sauce

Jar of spaghetti sauce
small block of cream cheese (3 oz)
Bag of frozen ravioli/tortellini
Jar of chopped garlic
Onion
Basil

Saute the onion and garlic in olive oil, add spag sauce and basil. Chop the cream cheese into cubes and add to the sauce cover and simmer on low, stir occasionally. In the meantime boil a lg pot of water when it's at a full rolling boil add ravioli/tortellini and turn heat to low. When the ravioli starts floating it's done. strain and put in a baking dish (i used a foil pan to avoid dishes to scrub later ;)) add sauce, sprinkle with parsley and serve. OR cover with foil and put it in the fridge to use as a make ahead meal! Hugs to All!

apple cinnamon muffins

I got this recipe from 5dollardinners.com but I made a few changes to make it more healthy.

1 cup of flour (i use a flour i get at publix that's a mix of whole grain wheat and white)
3 heaping tbsp applesauce
1/3 cup of sugar
2 eggs (I used 1 egg and 3 tbsp egg whites to cut the fat content)
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon (i used a little more in my apple cinnamon muffins)
1 cup of grated/mashed/chopped fruit (1 lg apple peeled, cored, grated equals one cup)


mix eggs, applesauce, fruit, and sugar
stir in dry ingredients
bake @ 350 (8-10 min for mini muffins or 15-18 min for full size muffins)

blueberry cake recipe...

This cake is sooooo good and I have made a few minor adjustments to make it even healthier but it def taste sinful...

It is good as a dessert with a blob of lite cool whip or for breakfast as a coffee cake!

1 cup fresh blueberrys
1 3/4 cup all purpose flour
1/2 cup quick cook oats
2 tst baking powder
1/2 tsp salt
1/2 tsp cinnamon ( i always add a little extra)
1 cup gran sugar OR splenda (I actually add a little less than a cup and havent noticed the diff)
2/3 cup of vanilla yogurt (I use fat free lite vanilla and it taste exactly the same and is a huge calorie and fat saver!!! I am tempted to try a diff flavor yogurt one day but for now its perfect!)
1 tbsp lemon juice
1/4 cup milk ( I use skim)
2 lg eggs (I use 1/3 cup egg whites)
Cinnamon sugar/splenda for topping

mix blueberrys,flour, oats, baking powder, salt, cinnamon, and sugar in lg mix bowl. then in smaller bowl wisk yogurt, lemon juice, milk, egg. then gently blend all ingredients together. i reccomend doing the entire recipe by hand as the blueberrys will smush and it's not as pretty plus its super easy! put in a loaf pan sprayed with pam and sprinkle the top with cinnamon sugar then bake at 350 for 35-45 min!

the kids love helping with the recipe and ryan thinks its yummy! Picky Paige however says the blueberrys look "melted" and won't even try it!

so much fun...

The four of us had so much fun making homemade pudding pops today! I got the recipe out of the Kraft magazine! We took a large box of pudding and three cups of milk and mixed it with the hand mixer for two minutes then folded in 1 cup of cool whip thawed. The we let the kids make individual pudding pops and mix in whatever they wanted. I set up all these little bowls with things to mix in..m&m's, oreos crushed, chopped up marshmallows etc they mixed it up and it was put in paper cups and we stuck plastic spoons in the middle and now they are freezing! I'll keep you posted but they looked soooooo yummy!
